    SCALLOPS WITH TOMATOES

    List of Ingredients




    1 lb. medium scallops
    1 TBsp. butter or margarine
    1/2 tsp. curry powder
    2-3 tomatoes
    1/2 cup whipping cream
    Dash salt
    Chopped parsley and chives

    Recipe



    Rinse scallops quckly. Pat dry. In a skillet, heat butter. Stir in curry powder. Saute' for a minute or two. Add scallops. Saute, stirring, for about 5 minutes until cooked through. Set aside.

    Rinse and chop tomatoes.

    Return skillet with scallops to heat. Add cream. Heat slowly and cook for just a minute. Sprinkle chopped tomatoes, salt, parsley and chives over scallops. Serve immediately.
