    Black Bean Chicken Salad

    List of Ingredients




    4 cloves garlic, peeled
    1 tsp olive oil
    11-ozs black beans or black eyed peas, cooked according to package directions and drained and slivered
    1 cup julienne-sliced cooked chicken or turkey
    2/3 cup chopped green pepper or yellow bell pepper
    1/2 cup diced yellow crookneck squash
    1/4 cup white wine vinegar
    2 Tbsp water
    2 tsp fresh sage, chopped
    2 tsp fresh thyme, chopped
    1/4 tsp pepper
    - lettuce leaves



    Recipe



    Place garlic cloves in a small shallow dish with oil. Bake, covered in a 325 F oven for 45 minutes to 1 hour, or until garlic can be easily pierced. Uncover garlic; cool while preparing salad. In a large bowl combine black beans, dried tomatoes, chicken or turkey, bell pepper and squash. For dressing, place garlic cloves and oil in a food processor or blender with vinegar, water, herbs, and pepper. Cover and process until smooth. Drizzle over salad and toss well. Chill at least 30 minutes to blend flavors. Spoon salad onto lettuce-lined platter.
