    Las Vegas Hot German Potato Salad

    5 pounds potatoes boiled in jackets, refrigerated several hours & peeles
    1 pound bacon
    1 tsp salt or to taste
    1/2 tsp pepper
    1 cup chopped celery
    1 cup chopped onion
    1 tart apple, pared, cored & grated
    3 TB flour
    1 1/3 cup water
    1/2 cup vinegar
    3/4 cup sugar
    1/4 cup chopped green pepper
    3 TB minced parsley
    1 TB paprika

    Cube peeled potatoes; fry bacon till crisp. Crumble bacon; set aside. In drippings, fry potatoes with salt & pepper, celery, onion till tender. add apple & stir in flour. Add water stirring till thickened. Transfer to ovenproof bowl & add remaining ingredients, sprinkling paprika on top. bake covered at 350 degrees for 40 to 45 minutes.

    Additional water may be added during baking if it becomes too dry. You can also ad a little chicken or beef broth instead of water. Apple cider will give it an even better taste.
