    Summertime Paella Salad

    3 tablespoons white wine vinegar
    2 tablespoons olive oil
    1 clove garlic, minced
    Salt and black pepper to taste
    3 cups cooked rice(cooked in low-sodium, low-fat chicken broth)
    1 cup cooked and cubed chicken breast
    1 cup cooked shrimp, peeled and deveined
    1 tomato, seeded and diced
    1/2 cup chopped onion
    1/2 cup cooked green peas
    1/3 cup sliced ripe olives

    Whisk together vinegar, olive oil, garlic, salt and pepper. Add rice, chicken, shrimp, tomato, onion, peas and olives. Toss.
