    Here is the recipe I got from Mamaw. Years ago I asked mom for this recipe and she sent me the same thing.

    Except she told me she did a couple things different:

    First she used onion powder instead of chopped onion in oil, you know dad.
    Lastly, she also topped it with another cup of shredded Cheddar cheese (so, 2 cups total)
    Also, I think she used sliced olives instead.

    Mom's version is what I make. Except, I use the prepackaged Kraft Mexican Style blend shredded cheese.

    It is stupid easy. All you have to do is brown the meat and dump all the other stuff in, stir and bake.

    Goes great with margaritas.

    This is the first thing I ever cooked for Elaine when we were dating.

    List of Ingredients




    1 Chopped onion
    3 T oil
    1 lb ground beef
    1 t salt
    1 can enchilada sauce
    1 can tomato sauce
    1 T sugar
    1 can cream style corn
    1 sm can chopped black olives
    1 cup corn meal
    1 c shredded Cheddar cheese

    Recipe



    Brown beef and onion in oil. Mix all other ingredients together and add to beef mixture. Pour into a greased casserole (iron skillet is better) and bake at 350 degrees for approximately 1 hour.
