    Pierogies

    This recipe is from my father-in-law, who's of Ukrainian heritage. We've messed around with the recipe but keep coming back to this one. The dough is great to work with- very elastic!


    List of Ingredients


    • 6 cups flour (NOT self-rising)
    • 2 eggs
    • 1 Tbsp. melted shortening
    • Water
    • Potatoes
    • American cheese slices (or your own taste)
    • Butter
    • Green onions
    • Onions cooked in butter for serving over the Pierogies


    Instructions


    1. Mix the 6 C. flour, 2 eggs, melted shortening and enough water to get a good texture. Use your hands to mix it all together. Roll the dough out thin and cut into squares. If you were to ask I'd say about 3.5x3.5 inch squares.
    2. Mash the cooked and peeled potatoes with butter and cheese. Add some green onions. Place a spoonful of this filling on a square of dough and fold it over (into a triangle) and seal the edges.
    3. Drop the pierogies into a pot of boiling water a handful at a time and remove them when they rise to the top of the pan.
    4. Serve with butter and cooked onions.


    Final Comments


    Pierogi fillings are endless in their variety, and some people like sour cream on top of their pierogies instead of the butter and onions; it's all a matter of personal taste, and each ethnic group prepares them in a different way.
