    Items needed:

    Baby Back Ribs (approximately 1 rack per adult)
    Big Rick's BBQ Sauce
    Rib Seasoning or spices for the rib rub

    It is important to use baby back ribs. These are the most tender and flavorful product available.

    List of Ingredients




    1 cup Lawry's Seasoned Salt
    2 Tbl White Sugar
    1 Tbl Black Pepper, Coarse Ground
    1 Tbl Onion Powder
    2 Tbl Garlic Powder

    Rib Seasoning:
    Mix all ingredients together. Makes enough for approximately 6-8 Racks of ribs

    To peel the ribs:
    Insert a stiff bladed knife under the skin on the backside of the first (smallest) bone. Work the skin loose and using a towel to help grasp the skin, peel off as much of the skin as possible.

    Lightly coat the ribs with rib spice. Cover and refrigerate until the ribs are ready to be seared off.


    To cook the ribs:
    Cooking procedures will vary if you are using a charcoal or gas grill.

    For a charcoal grill, when your pit is at it's hottest, place ribs on grill until both sides of the rib loin are marked with grill marks and well colored. For a gas grill, turn all burners to high to sear the ribs. This searing locks in the moisture of the ribs.

    The next step involves reducing the amount of heat in the pit by partially closing vents for 2 to 3 hours for a charcoal grill or turning down the burners in a gas grill. If you prefer, you can move the ribs to your oven for this step. The ribs need to cook for about 2 hours at 325 degrees. After you turn down the heat or move the ribs to your oven, the ribs need to be liberally brushed with Big Rick's BBQ Sauce. We recommend coating the ribs again after one hour of cooking.

    At Timberline, we like to cook our ribs until the bones pull apart very easily, but not until the meat is falling off the bone.
