ANGEL CAKE, MINTED

List of Ingredients
- 1 angel food cake
- 21/4 C. miniature marshmallows
- 1/2 C. milk
- 1/4 C. white or green creme de menthe
- 1/4 t. salt
- 4-6 drops of green food coloring
- 1 pint whipping cream
- 1 packet (1oz.) pre-melted unsweetened chocolate.
Instructions
- Split cake into 3 equal parts, horizontally.
- Heat marshmallows and milk over medium heat, stirring occasionally until melted, about 5 minutes.
- Remove from heat, cool at room temp. until thickened (20-25 minutes).
- Stir in creme de menthe, salt and food coloring.
- Beat whipping cream in chilled mixer bowl until stiff peaks form. Fold in marshmallow mixture.
- Stack cake layers frosting each with 1 C. of filling. Frost sides with remaining filling.
- Drizzle chocolate around top edge of cake allowing it to run down sides. Chill.
Final Comments
To soften chocolate. place packet in bowl of warm water while preparing frosting.
