    Praline Topped Brown Sugar Slices

    List of Ingredients


    • Cookie
    • 1 cup firmly packed brown sugar
    • 1 cup butter, softened
    • 1 egg
    • 2 tbsp Half and Half
    • 1 1/2 tsp vanilla
    • 3 cups flour
    • 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 1/4 tsp salt
    • 2/3 cup finely chopped pecans
    • Topping
    • 1 cup firmly packed brown sugar
    • 1/4 cup butter
    • 1/4 cup Half and Half
    • 1 1/4 cups powdered sugar
    • 1/2 cup finely chopped pecans, toasted


    Instructions


    1. Combine 1 cup brown sugar and 1 cup butter in large bowl. Beat at medium speed until creamy.
    2. Add egg, 2 tbsp Half and Half, and vanilla. Continue beating until well mixed.
    3. Reduce speed to low. Add flour, baking powder, baking soda and salt.
    4. Beat until well mixed.
    5. Stir in 2/3 cup chopped pecans by hand.
    6. Divide dough in half, shape each half into 8.5" long log. Wrap in plastic wrap. Refrigerate until firm (1-2 hours)
    7. Heat oven to 375F. Cut logs into 1/4" slices with sharp knife.
    8. Place 1 inch apart on ungreased cookie sheets. Bake 7 to 9 minutes or until edges are lightly browned.
    9. Remove from cookie sheets, cool completely
    10. Meanwhile, combine 1 cup brown sugar, 1/4 cup butter and 1/4 cup Half and Half in 3 quart saucepan.
    11. Cook over medium-high heat, stirring occasionally, until mixture comes to a full boil (3 to 4 minutes). Reduce heat to medium-low. Cook without sitrring for 1 minute.
    12. Remove from heat, stir in powdered sugar and 1/2 cup toasted pecans. Let stand until desired spreading consistency (1 to 2 minutes)
    13. Quickly spread topping over cooled cookies. If topping hardens too quickly, stir in a few drops of hot water


    Final Comments


    If I was being all fancy-schmancy, I might leave out the pecans in the topping and place a pecan half on the icing so it's not all lumpy and weird looking. but super yummy! and don't overcook the cookie part!
