    Apple Spiced Sweet Potatoes

    List of Ingredients


    • 3.5 to 4 pounds sweet potatoes, peeled and cut into 2" chunks
    • 1 can (19 or 20 oz) apple pie filling
    • 2/3 cup golden raisins (not when I cook it!!)
    • 3 tbsp butter, cut up
    • 1 1/2 tsp apple pie spice (I just sprinkled some cinnamon, nutmeg, cloves in)
    • 1 cup coarsely chopped pecans
    • 1/3 cup sugar
    • 2 tbsp sugar


    Instructions


    1. Lightly coat a 3.5 to 4 quart slow cooker liner with cooking spray.
    2. Add sweet potato chunks, apple pie filling, raisins, 3 tbsp butter and applie pie spice. Stir gently.
    3. Cover and cook on low-heat setting for 6-8 hours, or on high-heat for 3-4 hours.
    4. meanwhile, for candied pecans, in a large heavy skillet, combine pecans, sugar and butter. cook and stir over medium heat for 8 to 10 minutes - or until sugar mixtue turns golden and starts to melt.
    5. Pour nut mixture onto large piece of foil to cool completely. When cool, crush nut mixture coarsely.
    6. To serve, top potatoes with candied pecans.
    7. Makes 10 servings.
