    Slow Cooker Curried Chicken

    List of Ingredients


    • 1 1/2 lb boneless, skinless chicken thighs
    • 1 onion, chopped
    • 3 potatoes, cubed
    • 1 apple, chopped
    • 2 tbsp curry powder
    • 1 can (10 oz) chicken broth
    • 2 cups frozen peas, thawed
    • 2 cups uncooked Minute Rice


    Instructions


    1. Place chicken in slow cooker, top with onion.
    2. Add potatoes, apple, curry powder and broth.
    3. Cover with lid and cook on LOW for 8 to 10 hours, or on HIGH for 5 hours
    4. About 20 minutes before serving, stir in peas and rice. Cover and cook an additional 20 minutes


    Final Comments


    * I didn't thaw chicken thighs and it was still cooked fine.
    * We added some frozen cauliflower when adding rice and peas
    * Also added another can of broth and 2 tbsp of curry powder when we added the rice since it looked a little dry - it won't be a soupy or saucy dish - the rice will soak up as much liquid as you put in.
    * Might try some raisins??
    * the apple cooks away to nothing, so don't worry about it being too sweet
