    List of Ingredients


    • 4 chicken breast halves
    • 8 slices deli ham
    • 4 slices swiss cheese
    • 1 cup broccoli florets, cooked
    • 1/8 tsp pepper
    • 1 beaten egg white
    • 1 tbsp water


    Instructions


    1. Place each chicken breast between 2 pieces of waxed paper. Pound lightly until 1/8" thick.
    2. Remove plastic wrap. Top chicken with ham, cheese and broccoli.
    3. Fold in long sides of chicken and roll into a spiral
    4. In a bowl, mix egg white and water.
    5. In separate dish, mix breadcrumbs
    6. Dip chicken spiral in egg mixture and then into breadcrumbs. Use toothpicks to secure chicken while backing
    7. Transfer spirals to baking dish coated with cooking spray.
    8. Bake at 400 for 20 to 25 minutes or until chicken is tender and no longer pink
    9. Remove toothpicks. Slice into rolls and display over fresh greens on a serving platter


    Final Comments


    Make-ahead tip: Prepare this recipe all the way up to sitting in the baking dish, but instead of putting in oven, place in refrigerator. It can sit up to 10 hours before baking.
