    Carrot Surprise Cake

    List of Ingredients


    • Filling:
    • 8oz cream cheese, softened
    • 1/4 cup sugar
    • 1 egg, beaten
    • Cake:
    • 2 cups flour
    • 1 3/4 cups sugar
    • 2 tsp baking soda
    • 2 tsp cinnamon
    • 1 tsp salt
    • 1 cup oil
    • 3 eggs, beaten
    • 3 cups shredded carrot
    • 1/2 cup chopped nuts
    • Frosting:
    • 3 oz cream cheese, softened
    • 2 tbsp butter/margarine, softened
    • 2 tbsp milk
    • 1/4 tsp vanilla
    • dash salt
    • 2 to 2 1/4 cups icing sugar


    Instructions


    1. Combine cream cheese, sugar and egg, mixing well until blended. Set aside.
    2. Cake: combine dry ingredients
    3. Add oil and eggs, mixing until just moistened
    4. Fold in carrots and nuts
    5. Set aside 2 cups of batter, pour the rest into a greased and floured bundt pan
    6. Pour cream cheese mixture over batter (keep towards the middle of the cake)
    7. Spread remaining 2 cups of batter over top of cream cheese mixture - be sure to cover completely.
    8. Bake at 350 for 55 minutes, or until toothpick comes out clean
    9. Cool 10 minutes, remove from pan
    10. Cool thoroughly and frost with cream cheese frosting (directions below)
    11. Frosting: blend cream cheese and butter in small bowl. Add milk, vanilla and salt. Stir in enough icing sugar until thick enough to spread. Spread on cooled cake.
