    List of Ingredients


    • 1 box white cake mix (2 layer size)
    • 4 egg whites
    • 1 1/4 cups water
    • 1/3 cup oil
    • 1 can lemon pie filling (or make lemon pie filling from box)
    • Icing:
    • 1 can Lemon supreme frosting *see notes below*
    • 8oz container Cool Whip


    Instructions


    1. Preheat oven to 350 degrees. Grease 9x13 pan.
    2. Mix cake mix, egg whites, oil, water according to directions on the cake mix box.
    3. Spread batter into prepared cake pan.
    4. Drop pie filling by heaping teaspoonfuls over top of cake batter.
    5. Bake 30 to 40 minutes or until edges pull away from side of pan and top is golden brown.
    6. Cool cake in pan for 45 minutes or until completely cooled.
    7. In a medium bowl, mix frosting and cool whip.
    8. Spread frosting over cake.
    9. serve well chilled.


    Final Comments


    *** I wasn't able to find lemon frosting in the cans, so I used a can of "Fluffy white" frosting and added lemon extract until it had a good lemon flavour, and then added some yellow food colouring.
