Excellent! would double the sauce ingredients next time though
List of Ingredients
- 2 tbsp olive oil
- 3/4 pound boneless, skinless chicken breast - diced
- 1/2 tsp ground cumin
- 1 tsp chili powder
- 4 shakes cayenne pepper sauce
- 1/4 pound smoked ham, andouille, chorizo sausage chopped
- 24 peeled and deveined medium shrimp
- 2 tbsp flour
- handful fresh thyme leaves
- 2 cloves garlic, minced
- 1 cup no fat, low sodium chicken broth
- 1/2 cup half and half
- 3 shakes Worchestershire sauce
- 1 cup grated parmesan cheese, grated
- 14 oz fettucine, cooked al dente
- cracked black pepper to taste
Instructions
- Combine cumin, chili powder, cayenne pepper sauce and rub on diced chicken.
- In large skillet or frying pan, heat oil over high heat.
- Add chicken, ham or sausage and cook for 5 minutes to brown.
- Add shrimp and cook until it whitens - only a minute or so.
- Sprinkle pan with flour and cook another minute.
- Add thyme and garlic.
- Shake the pan and add broth - stir to pick up bits from bottom of pan.
- Stir in 1/2 and 1/2 and a couple of shakes of Worchestershire sauce and 1/3 cup of Parmesan cheese.
- Bring to boil.
- Reduce heat and simmer 5 minutes
- Toss drained fettucine with sauce and remaining cheese. Top with fresh ground black pepper and extra thyme
- Feed up to 6.
Final Comments
Double the broth and 1/2 and 1/2 and Worchestershire.
