    Uncle Freddie's Kickin' Chicken Chili

    List of Ingredients


    • 3 or 4 boneless chicken breasts
    • 2 tbsp vegetable oil
    • 1 tbsp butter
    • 1 slice bacon, diced
    • 2 large onions, diced
    • 1 jalapeno pepper, diced
    • 2 cans peaches and cream corn
    • 2 cans (113g each) diced green chilies
    • 3 cups vegetable or chicken broth
    • 1 lb/500g cooked Great White Northern beans (about 5 cups) - any white bean will work such as pea, kidney
    • 1 tbsp cumin
    • 2 tsp ground corriander
    • 1/2 tsp cayenne pepper
    • salt and pepper to taste


    Instructions


    1. Cut the chicken into 1" cubes
    2. In a large dutch oven, heat the oil and butter over medium-high heat.
    3. Brown the chicken, remove and set aside.
    4. To the remaining pan drippings, add the bacon and cook until golden.
    5. Add the onion and cook until soft.
    6. Stir in the jalapeno and cook another minute.
    7. Return the chicke to the pot and add the corn, chilies, broth, cumin, coriander and cayenne pepper. Note - there should be enough broth to cover the beans
    8. Cover and place in preheated oven at 325F for 2 to 3 hours or until broth is absorbed. Or, cook on top of stove.
    9. Season with additional salt and pepper to taste, if desired.
    10. Serve with grated cheese as well as an assortment of hot sauces.


    Final Comments


    1. Normally I use about 1/4 lb of bacon instead of 1 slice.
    2. I usually just buy 2 of the large cans of white kidney beans - or Presidents' Choice used to have glass jars of white Northern beans.
    3. I usually also serve with sour cream and tortilla chips.
    4. freezes well.
    5. The amount of broth is pretty flexible - just make sure there's enough to cover the beans... it might take an extra can depending on how many beans.
    6. the jalapeno doesn't make it really hot...
