    Recipe Introduction



    Note--handle peppers with rubber gloves and avoid touching skin with pepper
    juices. Baking will reduce the "heat" of the peppers, but raw juice is
    quite hot and can burn eyes and skin.

    List of Ingredients




    8 Jalapenos, sliced in half lengthwise, stems and seeds removed

    filling:

    4 slices Bacon; chopped up
    1/2 medium Onion; chopped fine
    1/2 cup finely crushed bacon rinds
    8 oz Cream cheese
    1/2 cup shredded Monterey jack
    1/2 cup shredded mild cheddar cheese

    Recipe



    Fry the bacon and onion together until bacon is crisp; drain well, and let
    cool. Mix filling ingredients together, reserving about 1/4 of the cheese
    for topping. Stuff sliced peppers with filling mixture. Lay pepper halves
    out in a non-stick sprayed casserole dish with cut side up. Bake at 350° F.
    for about 15 minutes. Sprinkle remaining cheese on top and return to oven.
    Turn heat off and allow to bake for 10 minutes more. Remove from oven.
    Allow to rest about 5 minutes before serving.
