    Salmon Muffins

    List of Ingredients




    1 can salmon, drained and shredded (I also pick out most
    bones and skin)
    2 eggs
    1/2 cup chopped green pepper
    1/2 cup chopped red pepper
    2 or 3 green onions, finely chopped
    1/2 cup shredded cheddar
    non-stick spray (The lemon/herb flavored spray is especially
    good with this,
    but
    optional.)

    Recipe



    Mix all ingredients together.
    Spray muffin tins with non-stick spray. Divide salmon
    mixture between 6
    large muffin tins, or you may opt to use mini-muffin tins.

    Bake at 325 degrees for 20 to 25 minutes, or until set.
    (Decrease baking
    time if you opt to use mini-muffin tins.)

    Can be eaten hot or cold, and are delicious served with
    extra mayonnaise.
