    makes 42 individual size cheeseballs or 1 large Cheeseball

    List of Ingredients




    2 - 8 ounce packages of Cream Cheese (may use reduce fat to reduce fat calories if desired)
    1 - 3.66 ounce can Smoked Baby Clams in cottonseed oil (do not discard oil).
    1 tablespoon Onion Flakes or 1/4 cup finely chopped onion (I am unsure of nutrient values using fresh onion)
    1-2 teaspoon garlic powder (use 2 if you like a stronger garlic flavor. I used 2 tsp in mine. )
    1-2 teaspoon Parsley Flakes
    2 Cups Pecans

    Recipe



    Place Cream Cheese in a Non-metal mixing bowl and allow to sit until room temperature.
    Open Baby Clams and pour the cottonseed oil into the bowl with the Cream Cheese.
    Finely chop the Baby Clams.
    With mixer; mix Cream Cheese, Onion Flakes, Garlic Powder, and Parsley Flakes.
    Add finely chopped clams and continue to mix until completely blended together.
    Refridgerate mixture for 1-2 hours til firm.

    Chop pecans in a blender or nut chopper until they are small pieces.
    Roll Cream Cheese mixture into small walnut size balls.
    Roll each ball in pecans.

    Refridgerate overnight for best consistency and flavor before serving.

    Total per batch = 42 Carbs; 62 g. Protein; 2,660 Calories; 144 g. Fat
    Each Cheesball contains: 1 g. Carbs; 1.5 g. Protein;

    Most of the carbs, calories, and fat in this recipe comes from the pecans.

    To reduce the number of carbs and fat in the recipe:
    Roll one large cheeseball instead of 42 individual cheeseballs.
    Roll large cheeseball in 1/2 cup of chopped pecans.
    This should reduce (according to pecan package) the recipe to total:

    Total One large Cheesball = 18 Carbs; 54g. Protein; 1460 Calories; 187 g. Fat
    Total divided by 42 servings = Per Serving: 0.5 Carbs; 1.25 Protein; 35 Calories; 4.5 g. Fat
