    Sprouted Almond Bites

    I make these "Almond Bites" that are really delicious. You could add some coconut oil,
    maybe a quarter or half a cup and reduce the almond butter to 1/2 cup. The recipe
    makes about 70 small balls. I keep them frozen for a quick snack.

    2 cups Almonds or 1 cup Almonds + 1 cup hazelnuts
    1/2cup Cocoa or Carob Powder
    1/2 Cup Honey
    2/3 Cup Almond Butter
    2 Tbs. Ground Flax seeds

    Topping Coconut, sesame seeds, carob, cocoa

    Place nuts in a bowl and cover with filtered water. Soak nuts on counter overnight and
    next morning strain all water off and leave on counter for another 8 hrs, rinsing 3 - 4
    times to keep them moist but not soaked. If you don't continue at this point, cover
    and refrigerate nuts.

    Place the sprouted almonds in a food processor and process until ground fine.
    Blender will not work!
    Add 1/2 to 3/4 cups cocoa or carob powder and pulse a few times.

    Transfer to a bowl, add honey, almond butter and flax seeds. Stir all of these
    ingredients until fairly smooth. You can refrigerate for an hour and it will be easier to
    roll the balls.

    Scoop out portions with a small mellon baller. Then with damp hands roll into balls
    and coat with coconut, sesame seeds, carob or cocoa. Enjoy right now or freeze for
    later. Will defrost in no time! Or you can eat them still frozen.
