    Almond Herb Muffins

    3/4 cup bacon drippings -- room temperature
    5 whole eggs -- room temperature
    2 cups ground almonds
    1 1/2 teaspoons baking powder
    1 1/2 tablespoons light cream
    1/2 teaspoon dried oregano (to taste)

    Beat bacon drippings with eggs, adding one at a time, beating after each. Mix almond flour with baking powder and add to egg mixture a little at a time while beating. Pour into greased loaf pan and bake at 350 for 50-55 minutes or until dry in center (toothpick test). Or make in muffin tin, 25-30 mins.
