    Soak 2 cups whole wheat flour in 1 cup yogurt, kefir, etc. overnight.
    The next morning, add:
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 Tablespoons maple syrup
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1 egg
    1/4 cup butter
    1 cup shredded raw apple (avoid Delicious varieties).
    Bake at 400° for 20 minutes. Makes 12 muffins.
