    Banana nut (Flax Seed) Muffins

    List of Ingredients





    ½ cup flax seeds (grind in coffee mill or blender) (Or buy ground flax seed
    at the health food store)
    ¼ cup protein powder

    2 Tablespoons oil (use something healthy)

    ¼ cup fructose
    1 beaten egg

    1 teaspoon baking powder

    1 ½ tsp banana extract

    ¼ tsp salt
    1 oz chopped nuts- walnuts or pecans

    ½ cup water

    Recipe



    Mix the above, let sit for a few minutes to thicken if necessary. Spoon into
    6 non-stick (I spray with Pam) muffin tins. Bake 25-30 minutes at 350° f.


    VARIATIONS:

    LEMON POPPYSEED: Use lemon extract in place of banana extract, add about 1
    tablespoon poppyseeds, and about 1 tablespoon lemon zest. (zest from one
    lemon)

    MAPLE BLACK WALNUT: Use maple extract in place of banana extract, use
    walnuts and black walnuts for the chopped nuts.
