    Drop Biscuits

    Source of Recipe

adapted from Homestead Cooking: A Sampler of Recipes from Homestead Heritage

    Recipe Introduction

Woo-hoo! I've been trying to find an NT friendly recipe for
biscuits since I started cooking this way! We ate these for brunch,
this morning, with fried apples and beef bacon. Yum!
    Katy W.

4 cups whole wheat flour (from soft wheat)
    1 1/3 c whey

    6 t baking powder
    1 t salt
    2/3 c melted butter

Mix together flour and whey, cover bowl with plastic wrap, and allow
to rest at room temperature overnight.

The next day, mix rest of ingredients into flour/whey mixture. (We
used our hands.) Let dough rest fifteen to twenty minutes.

    Preheat oven to 475.

Drop by heaping tablespoons onto a greased cookie sheet and gently
shape them into mounds with your fingers. Bake for 8 to 10 minutes.

(I used whole wheat flour, but I can't see why spelt or kamut flour
    wouldn't work, too.)
