    OK - this recipe seems pretty NT to me, with the exception of soaking
    the spelt. Any ideas on how to do this? There isn't any liquid in the
    recipe except eggs and coconut oil. I had it at my parent's house last
    week and YUM YUM with cream cheese. I want to make it and would love
    any input.
    2 cups Spelt
    2 t baking soda
    1 1/2 t Celtic sea salt
    2 t cinnamon
    3 eggs
    1/2 cup coconut oil
    1/1/3 rapadura
    1 tsp vanilla
    1/2 cup golden raisins
    1/2 cup chopped crispy nuts
    2 cups diced mango
    1/4 c flaked coconut

    Preheat oven to 350 degrees
    Grease one pound loaf pan or bundt pan.
    Sift flour, soda, salt and cinnamon into large mixing bowl. Make well
    in center and add the remaining ingredients and mix thoroughly.
    Pour into pan and let stand for 20 minutes.
    Bake one hour.
    Let cool completely before trying to unmold.
