    Mollie Katzen's Gingerbread

    Hey all,
    This is a recipe that is not totally NT but could serve as a
    compromise recipe or be converted pretty easily. It has an interesting
    technique of beating the molasses with an electric beater that makes
    the final cake very moist and fluffy.

    1/2 cup molasses (light, not blackstrap... though maybe you might like
    that... hehe)
    1/2 cup honey
    6tbs butter, melted
    3tbs grated ginger (I used less, but enough to make it gingery)
    3/4 cup firm yogurt (I used sour cream and half and half)
    1 egg
    2 cups unbleached white flour
    1 1/2 tsp baking soda
    1/4 tsp salt
    1 tsp dry mustard
    1/2 tsp cinnamon (I used a whole tsp)
    1/2 tsp ground cloves or allspice (I had neither)
    1/4 tsp nutmeg (I used 1/2 tsp)

    Beat molasses and honey with an electric blender for two or three
    minutes. Add melted butter and ginger (Mollie has you saute ginger in
    the butter first, I didn't) and beat another minute. Add yogurt and
    beat another minute. (I added spices here... the resulting batter
    could have been eaten with a spoon or put on your ice cream or...
    yeah, it was sooo good) Add egg and beat another minute. Combine dry
    ingredients together, add to batter and mix to combine. Spread batter
    in a greased 8x8 pan and bake for 30 to 35 minutes. Let cool before
    cutting (hah!).
