    We made this for breakfast this morning with the Maple Fennel Sausage
    Patties, and we were very happy with it. This freezes well.

    2 cups whole-grain flour
    3/4 cup + 1 tsp vinegar
    3/4 cup fruit juice (any kind works)
    1 grated apple
    2 eggs, beaten
    1 tsp baking soda
    2 tbs coconut oil, melted
    1/4 tsp sea salt

    Mix first three ingredients and soak seven hours or overnight. The next
    morning, add the remaining ingredients. Spoon onto a hot griddle or frying
    pan. To freeze pancakes, cook until done, cool, and bag with wax paper
    between layers. The serve, thaw completely and reheat in skillet. Can
    serve with Apple Cider Syrup.

    Apple Cider Syrup
    1/4 cup honey
    1/2 tsp cinnamon
    1-1/2 tbs whole grain flour
    2 cups apple juice

    Mix together honey, cinnamon, and flour; set aside. Heat apple juice and
    stir into honey mixture. Serve immediately over pancakes or french toast.
