Recipe Introduction
I made this for breakfast this morning and it was awesome. Like eating
a bowl of oatmeal cookies. You could do so many variations. It is
sweet so I am sure you could use less sugar but it would make a great
Christmas morning breakfast topped with homemade whipped cream. I am
sure you could assemble the whole thing the night before too but be sure
to still take the time to soak the oatmeal as this is very important for
proper digestion of gluten.
6 cups organic rolled oats
1 cup sucanat with honey (or sub white sugar)
1 cup regular sucanat (brown or sub brown sugar)
2 teaspoons salt
1 teaspoon baking powder
3 cups raw milk (I used 3 cups of plain kefir to soak) Plain kefir can
be found at most grocery stores.
1 cup coconut oil
4 eggs, slightly beaten
In a bowl combine rolled oats & milk/kefir. Soak overnight up to 24
hours on the counter to reduce the phytic acid.
In a large bowl, combine the rest of the ingredients. Then mix together
with oats & milk/kefir. Pour into a greased 9x13x2 baking pan. Bake
uncovered at 350 degrees for 35-45 minutes or until set. Serve with
additional milk as needed.
I added in plumped dried cranberries. You could add in all kinds of
dried fruits like raisins, blueberries, figs, dates, etc. Depending on
your taste some cinnamon, nutmeg, or ginger would be a great addition.
We had extra leftover so I frozen it in individual portions for quick
breakfasts. Heat on the stove/oven with a little milk to make the right
consistency.
