    Bruce Fife's "Cooking with Coconut Flour"
    1/2 pound ground beef
    1/2 cup onion, finely chopped
    3 eggs
    2 T coconut oil or butter
    1/2 t salt (more to taste)
    1/8 t pepper
    1/4 t paprika
    1/4 t ground marjoram
    3 T sifted coconut flour
    1/4 cup sharp cheddar cheese, shredded (again, I double this and mix half into mix and sprinkle rest on top)

    Saute ground beef and onion in butter or olive oil until meat is brown and onion is tender; set aside. Blend together oil, salt, pepper paprika , and marjoram.
    Stir in coconut flour until there are no lumps remaining.
    Fold in meat mixture
    Fill greased muffin cups with batter.
    Sprinkle tops with cheese.
    Bake at 400 degrees F. (205 C) for 15 minutes. Makes 6 muffins. (I got 8)
