1 tablespoon olive oil or butter
1 cup chopped red, green, or yellow bell peppers
1 cup chopped green onions (spring onions, scallions), green and white parts
3 cloves garlic, finely chopped
1 cup diced zucchini
1/2 cup frozen broccoli, thawed
8 eggs, beaten
1/4 cup chopped cilantro or parsley
1 teaspoon dried oregano
salt and freshly ground pepper (to taste)
cayenne pepper to taste (optional)
1 cup grated mozzarella or cheddar cheese
8 low carb tortillas or crepes
Recipe
Heat the oil or butter in a large skillet over moderate heat. Saute the
peppers, green onions, and garlic until tender but not brown, about 5
minutes. Add the zucchini and your favorite vegetable and cook covered for 5
minutes, stirring frequently.
Add the eggs, cilantro or parsley, oregano, salt, pepper, and optional
cayenne
and cook until eggs are set, stirring occasionally.
Spoon the mixture onto the low carb tortillas or crepes and top with the
grated cheese of your choice. Fold over one side of the tortilla about 2
inches and roll up, making the folded side the bottom of the tube.
Serves 4 (2 burritos each) @ 281 calories, 19 grams fat, 9 grams protein,
and 8 grams carbohydrates w/ 2 grams fiber. Nutritional analysis does not
include the low carb tortillas or crepes.
