    I make pork sausage, but don't see why you could not use turkey.
    It's my secret recipe so............ susshhh don't give it out
    The recipe is using dried spices, if using fresh triple the amount.

    10# ground meat
    4 TB salt
    1 TB ground black pepper
    2TB leaf sage
    1 TSP ground ginger
    1 TB ground nutmeg
    1 TB leaf Thyme
    1 TB hot pepper flakes
    up to a pint of ice water to make mixing easier. Not necessary if you want
    to leave it out.

    You may want to use less salt to begin with. Then fry up a sample patty and
    adjust if necessary. IMHO leaner meats like turkey can take less salt.
