    Chris Asselin's LC Cereal

    Source of Recipe

    Chris Assellin

    Recipe Introduction

    serves 1

    List of Ingredients

    1 Tablespoon flax meal
1 tablespoon shredded coconut meat -- unsweetened
    1 tablespoon almond meal
1 tablespoon DaVinci syrup -- or artificial sweetener of choice
    1/4 teaspoon psyllium husk
    1/4 cup water
    vanilla extract -- to taste

    Recipe

Mix all ingredients together. If you like the cereal cold, make it ahead of time, and put it in the fridge. When you go to eat it, it will be much thicker from the flax and psyllium absorbing some of the water. Add some more water *slowly* until you are at a consistency you like. If you want the cereal hot, pop it in the microwave at this point until it is heated up. The heating will cause the flax and psyllium to do some absorbing, but not as much as if you leave it in the fridge overnight (this is what I do, then I just grab it in the morning and take to work to eat there.) This recipe can also be made in larger quantities. Just increase the amounts in equal portion. I actually made double this amount (so all the tablespoons are in the quantity of '2', and double the water). I sometimes don't have davinci syrups so I just use some Splenda. Add vanilla extract to taste. I personally like alot, some don't. Some berries or broken pieces of nuts go well with this too, if you are past Induction.
