BASED ON A RECIPE BY GOURMET1 ON THE ATKINS-NEW LIST
2 LB, SAUSAGE, BROWNED, CRUMBLED, AND DRAINED.
8 EGGS
2 CUPS GRATED CHEESE
1/2 CUP SOY FLOUR OR PLAIN PROTEIN POWDER
1/4 CUP CHOPPED ONION
MIX ALL INGREDIENTS AND PUT INTO A 9"X13" PAN. BAKE AT 350* UNTIL LIGHTLY BROWN. LET COOL SLIGHTLY. CUT INTO SQUARES AND STORE IN ZIP-LOC BAGS, HEAT IN MICROWAVE. MAKES A GREAT MAKE-AHEAD BREAKFAST FOR THOSE IN A RUSH IN THE MORNINGS.
VARIATION: USE CRUMBLED BACON OR CHOPPED LEFTOVER MEAT OF ANY KIND IN PLACE OF THE SAUSAGE.
