1 c oatmeal
3/4 c oat bran
1 1/4 c milk (have used a combination milk/kefir)
3/4 c diced dried apricots (have used raisins or currants)
1 tbsp grated orange rind
1/4 c orange juice (have used apple juice)
1/3 c wheat germ
1/4 c honey (have used maple syrup)
Combine all ingredients and stir well. Cover and refrigerate for 8 hours or
overnight. Before serving stir thoroughly. Can be stored for as long as 24
hours.
For this recipe, we keep the amounts of the dry ingredients the same, but may
use just oatmeal or whatever we have on hand. (I have heard that parts of a
grain, like bran or germ are not as good as the whole grain. Does anyone
have any comments on this?) I have increased this recipe and used kefir for
at least part of the milk and I think this has made it to keep longer. I
didn't use all kefir b/c otherwise some of mine wouldn't eat it. I like to
make this one during the summer since no cooking is involved.
My kids made the "Crunch" recipe for b-fast yesterday and my dh VOLUNTARILY
put milk on his!! And he admitted that he wasn't sick yet (lactose
intolerant kind)! Maybe he'll come around yet. I explained - again - why
the fat is important. He's also concerned about the fat making him fat. I
*think* it may have helped that we weren't all there watching, ready to tease
him
