    I got this off another group so the notes are not mine. LOL. I have not
    tried this recipe yet. I have the oats soaking in for tomorrow morning
    :). I can send in a report. I didn't have buttermilk so I used Kefir.
    I plan on cooking them in VCO and I am using sprouted spelt flour. I am
    thinking some banana and crispy walnuts would be yummy added too.
    My kids LOVE oatmeal pancakes. This is my recipe for it. It is a bit
    different than yours. For fun I sometimes add a handfull of chocolate
    chips and chopped walnuts in the batter. Served with cut up keilbasa,
    this is actually the number one requested breakfast for birthday
    mornings.
    1 cup quick oats
    1 cup buttermilk
    1 egg
    2 tbs butter melted and cooled
    1/4 cup flour (I use whole wheat)
    1 tbs sugar
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp cinnamon
    dash salt
    1/2 tsp vanilla

    Soak oats and buttermilk in fridge over night. In the morning add the
    rest of ingredients and mix. Sometimes more liquid is needed, if so
    just add more butter milk or I add skim milk too. spoon onto griddle (I
    use nonstick so I don't need oil) and cook until done, flipping when
    necessary. Enjoy!
