    baked oatmeal recipe

    In a 8x8 pan, mix:
    1/2 melted butter or coconut oil
    1/4 maple syrup (optional or substitute)
    2 eggs

    Add:
    3c oatmeal
    2t baking powder
    2c milk

    Add in suggestions:
    nutmeg, cinnamon, vanilla, apple or pumkin pie spice, flaxseed, fruit,
    etc...

    Let this sit overnight (I put it in the refrigerator because of the
    eggs). In the morning, bake for 30-45 min at 350 F.

    To do things more NT like, the oatmeal could be soaked with kefir or so
    overnight, before adding the rest of the ingredients (but omitting the
    milk), but I haven't tried that yet. I would use a 'young' kefir because
    it could get too thick otherwise.

    My kids love this cold as a snack, with fresh fruit and whipped cream! I
    do not like oatmeal, but I like this!
