    Baked Broccoli Cheese Casserole

    4 cups trimmed broccoli
    1 cup pearl onions
    2 medium eggs, lightly beaten
    1 cup ricotta cheese
    1 tablespoon scallion, minced
    pepper to taste
    1/2 cup shredded cheddar cheese
    1/4 cup low carb bread crumbs or crushed pork rinds
    butter

    Recipe



    Parboil broccoli and onions for 7 minutes; drain and arrange
    in a 1 1/2 quart buttered casserole dish.

    Mix eggs, ricotta cheese, scallions, pepper and 1/4 cup of the
    shredded cheese. Pour over broccoli and onions.

    Sprinkle the low carb bread crumbs or pork rinds and the remainder of
    the cheese over the casserole. Freeze, if desired.

    When ready to serve, preheat the oven to 350 degrees, dot the frozen
    casserole with butter (if desired) and bake, uncovered for 1 1/2
    hours. Or let thaw overnight in the refrigerator and then bake at 350
    degrees for 45 minutes.

    Serves 8
