    Crust-less Baked Quiche

    1/4 cup butter

    6 strips bacon, chopped and fried crisply

    3/4 cup chopped onion
    1/4 cup flour
    Salt to taste
    1/8 teaspoon pepper
    2 cups milk or half and half
    6 eggs, well beaten
    4 (10-ounce) packages frozen chopped spinach, thawed
    and drained

    Preheat oven to 350 degrees fahrenheit.

    In a saucepan over medium heat, cook onion in butter until tender (about 5 minutes). Stir in flour, salt and pepper until blended. Gradually stir in ½ of the milk or half and half. Cook, stirring constantly, until sauce is thickened. Add remaining milk or half and half.

    Slowly pour egg mixture into cream sauce, stirring rapidly to prevent lumping. Add spinach and bacon bits. Stir until mixed. Pour mixture into a 9 x 13 non-stick sprayed glass baking pan. Bake at 350 degrees for 40 minutes or until a knife inserted into the center comes out clean. Cut into servings.
