Laurie’s Lasagna-Type Casserole

Recipe Introduction
I really love this recipe! This is based on a lasagna recipe in Dana
Carpender's "500 Low-Carb Recipes" book. It's easy to make and even
non-lowcarbers like it.
Combine and simmer for about 10 minutes (I skip the simmering step):
*1 pound of cooked ground hot Italian sausage
1 cup of low-carb spaghetti sauce or 1 (8 oz.) can of tomato sauce and 1
tsp. Italian seasoning
1 (4 oz.) can sliced mushrooms, drained
Spray the bottom of a 9" x7" x2.1/2" 11 cup Pyrex dish (or an 8" square dish
would work) with vegetable spray. Spoon meat mixture into dish.
Mix together:
1 cup of ricotta cheese
1 egg
1/4 cup mozzarella cheese
about 1 tsp. Italian seasoning
Spread on top of meat mixture
Put about 15 pepperoni slices on top of the ricotta mixture. Then put a
cup of shredded mozzarella cheese on top of the pepperoni. Add another layer of
about 15 pepperoni slices.
Bake at 350° for about 20 minutes until bubbly.
It makes 4 good-size servings with 9 grams of carbs and 3 grams of fiber,
and 43 grams of protein per serving.
*An easy way to cook the ground sausage is to put it in a plastic colander
over a glass bowl in the microwave. Microwave for about 5 minutes, breaking
up the meat and stirring a couple times until it's not longer pink.
