    List of Ingredients




    2 slices ham about 3/4 inch x 4 inches x 4 inches, cut into
    cubes, OR
    4 slices bacon, cooked crispy and crumbled, reserve
    drippings
    1/4 cup grated onion
    2 Tablespoons butter
    1/2 pound Swiss cheese, grated
    3 eggs
    1-1/2 cups cream
    1/8 teaspoon dry mustard
    1/2 teaspoon salt
    Black pepper to taste
    Cayenne pepper to taste

    Spray with non stick spray: individual-sized glass pastry
    cups or aluminum "pie" pans for the quiche.

    Cook ham (or bacon) and set aside. In the pan where the
    meat was cooked, cook the onion until it has clarified. (Use
    a small amount of additional fat such as butter or bacon
    drippings if you are cooking ham for the quiche.)
    Remove from heat. Add cheese and stir well.
    In a medium bowl, beat eggs until foamy. Add cream and
    mustard. Mix well then add salt, black pepper and cayenne,
    stir again. Stir this mixture into the cheese-onion mixture
    and pour into prepared pastry cups. Bake at 400 degrees for
    20 minutes, or until golden. Serve hot. These tarts freeze
    well.

    4 quiches about 4 inches across.
