    This is a tasty cookie recipe that could be relatively NT with the right oil and sugar choices. Please play with it and let me know if you have any suggestions for tweaking it. It can easily be made into muffins or a loaf with a little less flour.
    2 c brown sugar
    2 c canned pumpkin
    1 c oil (coconut oil would taste GREAT)
    2 tsp vanilla extract
    4 c flour (I always use white, but wheat or sprouted would be just fine)
    2 tsp baking soda
    2 tsp baking powder
    1 tsp each salt, cinnamon, nutmeg and ground ginger
    Chocolate chipes, raisins, nuts or other mix ins

    Preheat oven to 350 degrees.
    Mix wet ingredients together in a medium sized bowl.
    Mix dry ingredients together in a larger bowl. Pour wet into dry, add any extras. Stir well and adjust flour until the dough can be formed into blobs. Spoon onto a greased sheet and bake 10 minutes or so until set.
    These are chewier than regular cookies, but very tasty.
