    RANI'S PEANUT BUTTER COOKIES

    Source of Recipe

    Rani's Low-carb Cook's Nook Chat on AOL

    List of Ingredients

1 CUP LOWEST-CARB PEANUT BUTTER YOU CAN FIND (ADAM'S IS THE LOWEST, IF YOU CAN FIND IT)
    1 EGG
    1/2 CUP SPLENDA
1/2 CUP + A FEW EXTRA TBSP BROWN SUGAR TWIN
2 TBSP PROTEIN POWDER (MY FAVORITE FOR THIS IS A FLAVORED WHEY-BASED PP, SUCH AS DESIGNER PROTEIN'S PRALINE OR VANILLA)
    2 TSP VANILLA
    1/2 TSP BAKING POWDER

    Recipe

    PREHEAT OVEN TO 350*
CREAM THE PEANUT BUTTER, EGG, AND VANILLA.
ADD THE REST OF THE INGREDIENTS (EXCEPT THE EXTRA BROWN SUGAR TWIN) AND MIX WELL.
FORM INTO BALLS ABOUT AN INCH IN DIAMETER (SHOULD MAKE APPROXIMATELY 32-36).
DIP EACH BALL INTO THE EXTRA BROWN SUGAR TWIN AND PLACE ON A COOKIE SHEET, SWEETENER SIDE UP.
THEY DON'T RISE MUCH, SO THEY CAN BE PRETTY CLOSE TOGETHER.
PRESS EACH BALL SLIGHTLY WITH YOUR HAND AND THEN IMPRINT WITH THE TINES OF A FORK.
BAKE FOR APPROX 12 MINUTES OR UNTIL THE TOPS ARE SLIGHTLY BROWNED.
REMOVE FROM COOKIE SHEET AND LET COOL.
STORE IN A ZIPLOC BAG IN THE FREEZER FOR BEST TEXTURE.
