    Crockpot Gingered Pork Roast

    Recipe Introduction

    If you have left over cranberry sauce or just want to use fresh here is a recipe that is unusual: sweet and sour, rich and spicy--and a great change from leftover turkey too! If you substitute cranberry sauce, you may want to wait to add sweetener and adjust for taste.

    List of Ingredients

    4 pound bone-in pork loin roast
    1 cup fresh or frozen cranberries, coarsely chopped
    4-6 packets Splenda
    1 canned chipotle in adobo, chopped*
    2 Tablespoons grated fresh ginger--about 1 inch **
    1/2 teaspoon salt
    1/2 teaspoon freshly ground pepper

    Recipe

    In a small bowl mix cranberries, Splenda, chipotle, ginger,
    salt and pepper.
    rub meat with mixture. Place roast in slow cooker. Cover
    and cook on low 8 to 10 hours. Servings: 6



    *Chipotles in adobo are smoked jalapeño peppers in a
    tomato-based sauce. They can be found in the ethnic food
    section of most supermarkets.

    **use a spoon to rake the peelings off the pieces of
    ginger--much easier than trying to peel them, they can then
    be crushed or grated on a grid
