    Simple Slow Cooker Stew

    made this yesterday and it is DELISH! It is my own concoction and actually took 2 days to make, but VERY easy......was in the mood for hot soup/stew, but without the high carb stuff in it. I think this fits the bill. Even my non-low carber husband loved it! :-) I'm sure you can adjust the amounts to fit your particular needs. This filled a 5 qt. crock pot.

    List of Ingredients




    2-3 lb. sirloin roast
    1 pkt. onion-mushroom soup mix
    1 lb. bag frozen cauliflower
    1 lb. can peas, drained
    1/4 c. beef base
    1 can beef broth
    water

    Recipe



    Day 1:Place about 1 c. water and roast in crock pot. Cook roast in crock pot all day until tender. Remove juice and meat from crockpot and chill in fridge overnight. (This lets the fat solidify and you can just scoop it off the top the next day.)
    Day 2: Scoop off fat, but save the juices. Cut up roast to desired size chunks. Place roast and juices in crockpot. Boil or steam the cauliflower to tender/crisp . Add it and the remaining ingredients and fill with water to desired consistency. Cook on high or low until hot.
