    Apple Pan Dowdy

    Source of Recipe

    Jo Gainey
    3/4 cup water
    2 Tablespoons black strap molasses
    2 Tablespoons lemon juice
    2 eggs, well beaten
    1/3 cup melted butter
    1 cup quick oats
1 cup (equiv measure) sugar substitute (I like splenda)
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    1/4 teaspoon baking powder
1/3 cup raisins, preferably chopped in food processor (may be omitted)
    1 cup pecans, medium chopped
1 1/2 cups apples, finely chopped (about 3 medium apples)
    1/2 teaspoon vanilla
    1 Tablespoon cinnamon
    1 teaspoon allspice

Preheat oven to 350-degrees. Mix together moist ingredients: water,
bourbon, molasses, lemon juice, eggs, and melted butter. Add dry
ingredients oatmeal, Splenda, salt, soda, and baking powder. Stir in
quickly. Add remaining ingredients and mix well. Place the batter into a
    non-stick sprayed or well-greased 9"x13" baking pan. Bake 40 to 50 minutes
or until the edges are golden brown.

Cut into squares while still warm, but not hot. May be spread with cream
cheese frosting. (Softened cream cheese, splenda, and a little vanilla )
Also can be served with whipped cream topping, or served plain.
