    Chocolate Mint Cheesecake Muffins

    8 ounces softened cream cheese
    1 egg
    2 tablespoons DiVinci sugar free creme de menthe syrup
    1/2 small box sugar free chocolate pudding mix (I like the
    chocolate fudge
    best.)

    Recipe



    Mix together all the ingredients with a mixer until creamy &
    well blended.
    Fill 6 paper-lined muffin cups and bake at 350 for 20
    minutes. Cool on wire
    racks and store in a zip lock bag in the refrigerator until
    it is time to
    serve them.

    If made as mini-muffins, decrease baking time to 15 minutes
    and watch
    closely.

    Variation: You may want to substitute any of the following
    for the sugar
    free DiVinci syrup, but decrease the amount to 1 1/2
    tablespoons: orange
    extract, vanilla, extract, or cherry extract.
