    Lemon Cheese Tarts

    One thing we learned about the cheese tart recipe is that we
    decided to use
    cupcake papers to put the tarts in but found it was a
    mistake. There was
    more of the tart on the paper than there was on the plate!!
    :o)

    List of Ingredients




    12 ounces cream cheese
    3 eggs
    1/2 cup Splenda
    1/2 teaspoon lemon juice
    1 teaspoon of vanilla
    whipped cream (optional)
    fresh strawberries, sliced (optional)
    non-stick spray

    Recipe



    Place all ingredients except the strawberries in the blender
    & mix well.

    Spray 12 muffin tins (regular-sized, not jumbo) lightly with
    non-stick
    spray.
    Pour blended mixture into muffin tin, dividing evenly. Bake
    at 350 degrees
    for
    approximately 25 minutes. (They will sink down in the
    middle.) Place muffin
    tins on wire racks to cool.

    Serve with a dollop of whipped cream on top and a slice of
    strawberry poked
    jauntily into the whipped cream.
