    Loons Butterscotch Miniature Cheesecakes

    1 cup water
    1 envelope (1 tablespoon) plain unflavored gelatin
    2 8-ounce packages cream cheese, cubed and softened
    8 packets artificial sweetener
    2 teaspoons sugar free butterscotch pudding mix (or a little
    more, to taste)

    Recipe



    In large bowl, microwave the water until it is hot. Dissolve
    the gelatin in
    the hot
    water. Add the cream cheese cubes and stir until the cream
    cheese is
    softened. Blend ingredients well with an electric mixer. Add
    the artificial
    sweetener and pudding mix and blend well. Pour into paper
    lined muffin tins
    (regular or mini), and chill until firm.
