    Raw Milk and Cream Chocolate Pudding

    In a medium saucepan combine 1 cup milk or cream and the following four ingredients -- 9-10 Tablespoons corn starch, Stevia to taste - less is more in this one, 1/2 cup to 3/4 cup organic cocoa powder, pinch of sea salt, and a pinch of Cinnamon (optional).

    Use a whisk to blend these together well. Once well blended, add 5 more cups of milk, cream or half and half (or any combination, just make sure it's 6 cups total with above single cup).

    Meanwhile, before heating milk mixture, separate 4 eggs; reserve whites for another recipe. Beat egg yolks together in a small bowl and set aside.

    Heat milk mixture over medium heat, stirring nearly constantly until it reaches a boil. Once the pudding is thick enough to coat the back of a spoon, it is ready. Set pan off of heat. Add 1 Tablespoon vanilla extract; stir well.

    Add a small amount of hot pudding to egg yolks a little at a time, stirring quickly to temper the egg yolks to closer to the temperature of the pudding mixture. Then pour at once into pudding mixture, stirring constantly until mixed.

    Pour into individual serving bowls or large dish and cover the top with plastic wrap orparchemnt paper. This prevents a skin from forming on the top and makes the pudding creamier. Cool at least slightly before eating warm or refrigerate and enjoy cold, perhaps with fresh whipped cream on top. MMMMMmmmmm.

    Variation: Omit the cocoa powder and you have vanilla pudding. I personally omit almost all the stevia for Vanilla Pudding, too, but some like it sweeter.
