    Quick Goat's Milk Cheese

    1 qt. goat milk

    2 to 3 Tbsp. lemon juice

    Bring milk to rolling boiling in 3 qt. pot. Stir. Add lemon juice and
    continue boiling and stirring until curds separate from whey. Pour
    curds and whey into a colander lined with a clean cotton dish towel.
    Salt curds. Bring corners of dish towel up and tie to water faucet.
    Let drain 1 to 2 hours. Yields about 1 cup Ricotta type cheese. If you
    double the recipe, double the size of pot.
